Our story

The Medina Spice Co. began with a simple frustration: the spices in our own kitchen tasted of almost nothing. So we went looking for better — and found it in the winding lanes of the Fes medina.

Born in a Fes souk

Morocco has traded in spice for a thousand years, and nowhere more so than the old medina of Fes. Its spice merchants still buy the way they always have — by smell, by colour, by feel — from growers they have known for generations. That is where we started, and where we still buy today: choosing each spice by hand, from people who take it as seriously as we do.

Sealed at their freshest

Here is the honest truth most brands won’t tell you: we don’t grind your spices the moment you order, and neither does anyone else at any real scale. What matters far more is what happens after grinding. Ground spice loses its life to light and air. So every one of ours is milled in small batches and sealed straight into an airtight metal tin — no light, no air, no slow fade. Kept in its tin, a spice stays as fresh as the day it was ground.

Small batches, hand-packed

Everything is hand-picked and hand-packed in the medina, in quantities small enough that nothing sits around. That is the whole idea: less on the shelf, more in the jar, and flavour that actually tastes of something.

بهار — bahār

Bahār is the Arabic word for spice, and it is stamped on every tin. It is also a small invitation: to cook with a little more colour, a little more warmth, and spices that earn their place in the pan.
